The Protected Designation of Origin (PDO) Cabrales has released today the production results for 2024. Some data that, although encouraging for the increase in kilos of cheese produced -an 8.2% with respect to the data of 2024-, follow a worrying dynamic. And the fact is that the Cabrales PDO has lost two of its cheese producers, registering a total of 18 in 2025; but it also has two fewer milk producers, who remain at 20. A figure that would support the setback of the last reorganization in the council.
The number of producers is down on the previous year
.Apart from this figure, the cheese producers attached to the Cabrales PDO produced a total of 239,350 kilos last year; 2,584 more than in 2024. A figure that is also recorded in the number of liters of milk transformed into cheese, which grew from 3,664,737 in 2024 to 3,938,094 liters in 2025.
The most significant figure in the 2025 results focuses on the number of large-sized cheeses, which increased by 11% over the previous year's data. The difference recorded between the number of cheeses produced and the number of back-labeled cheeses, a total of 195,748 -710 more than in 2024-, responds to the fact that the increase in the production of large cheeses has been offset by the drop in the production of medium and small-sized cheeses. This will be corrected in 2026, as the Cabrales PDO has already begun to differentiate the back labels of certified cheeses into large cheeses, cheese halves and small cheeses.
