Cabrales cheese is one of the most emblematic products of Asturian gastronomy and one of the most recognized blue cheeses in Spain. Its production is protected by the Denomination of Protected Origin Cabrales, created in 1981 to guarantee its authenticity, quality and link with the territory.
It is a natural cheese made in an artisanal way with raw cow's milk or a mixture of cow, sheep and goat, from registered herds within the production area.
Production area
The production of the cheese is limited to a very specific territory:
- the council of Cabrales
- the villages of Cáraves, Oceño and Rozagás, in the council of Peñamellera Alta
This geographical link forms an essential part of the identity of the product and of the conditions established by the Designation of Origin.
Identification of the product
To guarantee its authenticity, each piece of Cabrales Cheese must bear:
- the maker's label
- the numbered back label of the Regulatory Council of the D.P.D.O. Cabrales
This control system ensures that the cheese has been produced, matured and marketed in accordance with the standards established by the Denomination of Origin.
